This light cleansing soup helps clean the kidney’s and liver! For best results enjoy this soup 20 minutes before your main meal.
2 cups watermelon, seeded and cut into small dices
1 large tomatoes, finely chopped into little cubes
½ cucumber, finely chopped into little cubes
1 red bell peppers, finely chopped into little cubes
¼ cup finely chopped white onion
2 gloves crushed garlic
½ red chili
2 limes juiced
1 handful of fresh basil
1 small handful of fresh mint
Salt (to taste)
Black pepper (to taste)
Begin my adding the chopped tomatoes, cucumber, pepper, onion and garlic into a bowl and combine until you have a nice mixed salad. Add a small pinch of salt, some pepper, squeeze some lime juice and add some fresh chopped basil. Save one cup of mix and set aside. Add the watermelon and the remaining salad mix into a Vitamix with the mint, chili and rest of lime juice and basil and blend until smooth. Add salt if needed. Keep soup in fridge until cool and serve into clear bowls by topping each bowl with a few tbsp of the salad.
