It’s cold out there for some of you readers. I know, I was born and raised in Canada. So today I thought we’d skip ahead in time to Spring, and share a recipe that calls for the quintessential turn of the season ingredient we all know and love; the sweet pea. Enjoy.
Feel free to sub in shredded zucchini, sweet potato, edamame, frozen peas, corn for the fresh peas.
Sweet Pea Hummus
1/2 C peas, fresh from the pod.
1 T fresh basil
4 leaves fresh mint
2 T tahini
2 T nutritional yeast
1 clove garlic
1 T extra virgin olive oil
Add all ingredients to a blender or small bowl food processor. Blend to desired consistency. Devour.
