Sweet-Heart Ice Cream Cookie Sandwiches (Raw)

It’s almost Valentine’s day!  The perfect time to treat your whole body (and your love’s) with a whole food treat!  The following decadently delicious raw dessert recipe contains no added sugar, as it uses high fiber raisins and bananas for sweetness.  The combination of healthy fats from the nuts and coconut oil also help keep blood sugar spikes from those fruits at bay!

If you don’t want to go to the trouble of setting, rolling, and cutting out the fancy shapes, you can also make the cookie dough into a crumble, and simple sprinkle it over scoops of the ice cream!

Sweet-Heart Ice Cream Cookie Sandwiches (Raw)

Cookieraw ice-cream sandwich

  • 1/2 cup almonds
  • 1/2 cup cup dried shredded coconut
  • 4 tbsp raw cacao powder
  • 1/4 c raisins
  • pinch sea salt

Ice Cream Layer

  • 1 large banana
  • 1/2 cup raspberries
  • 4 tbsp coconut oil

Cookie Directions

Place nuts and coconut into a food processor and process until crumbly.

Add in remaining ingredients. Process until a sticky dough forms.

Roll out cookie batter onto a cutting board into desired thickness, and then cut into desired shapes.  Set cookies aside.

Filling Directions

Place all ingredients into a blender and blend until smooth and creamy.

Pour mixture onto a parchment paper lined cookie sheet, and place in freezer.

Once frozen, cut filling into same shapes as the cookies.

Stack one piece of filling between 2 cookies and share with your sweetie!
