Raw Carrot, Coconut and Avocado Soup

If you’re trying to get off sugar (or take a break from sugar) and balance your blood sugar levels this soup is for you. Not only is it packed with living enzymes but it will also curb cravings for sugar and “treats.”

The fat found in the avocados and the coconut meat will help balance blood-sugar levels and curb cravings for sugar. Getting off sugar is hard at first but very doable with the help of adding more fat to your diet. If you can replace your afternoon chocolate “treat” with a fatty, protein-y food, you won’t feel like you’re denying yourself – emotionally or physically.

  •  4 cups fresh carrot juice (set the pulp aside to make crackers)
  • 1 cup raw coconut flakes
  • 2 avocados (add at the end and blend until creamy smooth)
  • 1 tsp hot sauce or 1/2 a jalapeño pepper (seeds removed)
  • ½ tsp salt (or to taste)
  • 1 cup fresh dill or cilantro (add at the end and pulse)

In a Vita Mix blender, blend the fresh carrot juice with the coconut flakes, hot sauce and salt until creamy smooth. Add in avocado and blend a little longer until the texture is rich and creamy. Add in the fresh dill or cilantro and pulse until it’s well combined but leave small green bits visible. Place soup in fridge for at least 20 minutes before serving. To add an extra touch you can top the soup with a dollop of cashew sour cream or coconut cream before serving. Garnish with cilantro before serving.
