Creamy like mashes potatoes or fluffy like rice, millet is a delicious grain that can accompany many types of food. As with most grains, millet is available in markets throughout the year. It is an alkaline grain as well as it is high in potassium, magnesium, and protein.
1 10 ounce box of millet, cooked to manufacture directions
1 15.5 oz can of chickpeas, drained and rinsed
2 teaspoons grated orange zest
2 tablespoons extra virgin olive oil
1 teaspoon sea salt
Freshly ground black pepper to taste
2 pounds cherry tomatoes cut into wedges
1/2 small sweet onion, thinly sliced
1/4 cup fresh mint, torn
1/4 cup roughly chopped Almonds
In a medium bowl, mix together the orange zest, olive oil, sea salt, black pepper, tomatoes, onion, and mint. In a large bowl, put in millet, spoon in the chickpeas and tomato mint mixture, and fold together. Garnish with the chopped almonds and serve.
