Sweet-Heart Ice Cream Cookie Sandwiches (Raw)

It’s almost Valentine’s day!  The perfect time to treat your whole body (and your love’s) with a whole food treat!  The following decadently delicious raw dessert recipe contains no added sugar, as it uses high fiber raisins and bananas for sweetness.  The combination of healthy fats from the nuts and coconut oil also help keep blood sugar spikes from those fruits at bay! If you don’t want to go to the trouble of setting, rolling, and cutting out the fancy shapes, you can also make the cookie dough into a crumble, and simple sprinkle it over scoops of the ice cream! Sweet-Heart Ice Cream Cookie Sandwiches (Raw) Cookie 1/2 cup almonds 1/2 cup cup dried shredded coconut 4 tbsp raw cacao powder 1/4 c raisins pinch sea salt Ice Cream Layer 1 large banana 1/2 cup raspberries 4 tbsp coconut oil Cookie Directions Place nuts and coconut into a food processor and process until crumbly. Culinary Options for All: Tips to Find Your Perfect Balance in Daily Nutrition

To cook, or not to cook.  That was our question.  And we decided to do both. Hacienda del Sol prides itself in being an all-welcoming wellness environment, and as such, we are continually revising and re-vamping our programs and offerings to best serve our new and returning guests.  Our food is one major draw for not only those in search of a healthy alternative to traditional buffet style all-inclusive resorts, but also a big reason that many of our clients dream of our recipes and returning to our oasis long after leaving. Meet the Expert: Sharlynn

Sharlynn (Shar) is one of Hacienda Del Sol’s Immunity Experts and Juice Cleanse facilitators. She has a broad knowledge base that combines both Western and Eastern modalities, with a focus on how the body can heal itself. Shar worked in Acute Medical & Surgical settings as a Registered Nurse for over twenty years. She is a Yoga Therapist, Yoga Instructor and an Eastern style Bodyworker, having studied in Thailand.  Her background also includes working as a Rehabilitation Practitioner and a Psychiatric Nurse. Shar believes in the body’s inherent ability to heal itself, providing we create the optimum environment and care, via nutritious food, detox practices, exercise, and a positive mindset. She believes that the mind/body/spirit connection cannot be denied. Thus, in order to heal root causes rather than focus on treating symptoms, we must nourish ourselves on all levels. Recipe: Spirulina Detox Smoothie

Mmmm, prokaryotic microorganisms. What I am talking about here is what we more lovingly refer to as super Spirulina!  If you have visited us here at Hacienda and taken part in the 7 or 14 Night Juice Cleanse Program, you will have come to know this blue-green algae well as it is served as one of the 6 daily juices.  Menlha has long touted the health benefits of this food, and we are lucky to have a local supplier right here in Costa Rica! And while I am not usually one to brag, I will say that our Spirulina is the best tasting you will find anywhere in the world!
