Organic vs Non Organic

Food Transparency Farm-to-table. These days, if you’re a gourmet restaurant and you’re not doing farm-to-table, it’s hard to compete. While it has become mainstream to honor real food, we here at Hacienda del Sol have always looked to use the best, ripe, local and fresh ingredients when creating our decadent and delicious dishes in our restaurant.  We know that the closer to the field (or tree) we can source, the better the taste and nutrition it will deliver to our clients.  We also know that customer demand for sustainably sourced food has never been stronger and we want to offer our readers as much information on the topic that we can, while encouraging everyone to look further into where their food comes from whether at home, or while traveling. Sustainability Update: Cool Community Karma

2015 has brought a lot of firsts and “newness” to Hacienda!  What, with all our bungalow, colema, and reception area renovations (stay tuned for a blog on that to come!), forever evolving organic greenhouse, and firmly standing, always growing “garbage wall”, it is tough to see how we can top things in 2016! That being said, we do have a few more exciting additions to tell you about.  Besides this here swanky new website, we are offering some new incentives in our sustainability mission this year that we haven’t even told you about!  First though, some updates: Garbage wall You may recall when we told you about this eco-chic project back in November.  Well, Menlha and her fearless crew have completed stage one of the great wall, and it looks spectacular!  Who would know this gorgeous grounds surround was filled with trash? Harnessing the Power of the Sun!

Green season is just around the corner in Costa Rica, but we here at Hacienda like to consider our environment and vision “green” all year round!  Not only are we aiming to self-sustainably fuel 80% of our restaurant needs by end of 2015 via our outstanding new organic garden, but we also strive to keep it clean for Mama Nature in any way possible. One of the biggest steps towards eco-elevated service was in late 2014 when owners of Hacienda Crystal & Ramiro Gallardo decided to move over to solar energy.  Ramiro sourced out a company run by a fellow named Monty, who at first glance looks like something out of a Mad Max movie; a tattooed bad ass with a finely honed instinct for the most efficient way of getting things done.  Monty is a highly skilled electrician from Germany that is bridging state of the art green technology with the limitations inherent in jungle living – a perfect fit for this new eco-initiative! The Garden

By: Meg Pearson Conscious Culinary  Often, food can make or break a holiday.  That is why we take our cuisine seriously here at Hacienda del Sol.  We approach food with the same passion and care as we do all of our services and facilities, and strive to please every palate, while also serving mother earth and the health of our guests with respect and honor.  We strive to ensure our restaurant is serving up the very best quality dishes by selecting local and seasonal ingredients, and working with area farmers and vendors that share the same vision.  Whether we are sourcing raw cacao from our neighbours farm, or freshly pressed coconut oil from our local friend and supplier, we look to our community for close to home and healthy fare. The Miracle Tree!

By Meg Pearson There’s a new powerful plant in town, a green leafy tree that is taking up plenty of space in the brand new Hacienda organic farm! Moringa! The Miracle Tree! This plant is native to the sub-Himalayan areas of India, Pakistan, Bangladesh, and Afghanistan, but lucky for us, it is also thrives here in the Central American tropics, and is one of the most concentrated superfoods on the planet. While the bark, flowers, fruit, seeds, and root are used medicinally, we love the leaves, and that is where we are going to put our focus today!  Rich in protein and amino acids, these green guys have seven times the Vitamin C of oranges, four times the Vitamin A of carrots, 3 times more iron than spinach, and 4 times the calcium in milk.   Add some serious doses of Vitamin B, Vitamin C, and many minerals, and you are looking at one true tremendous food so healthy in fact, that it has been a useful tool for fighting malnutrition in some countries. Not only is this leaf a lovely nutritional powerhouse, but it is also a herbal healer!  In one study, Moringa reduced asthma symptoms and the severity of asthma attacks in adults.  […]
