Sweet-Heart Ice Cream Cookie Sandwiches (Raw)

It’s almost Valentine’s day!  The perfect time to treat your whole body (and your love’s) with a whole food treat!  The following decadently delicious raw dessert recipe contains no added sugar, as it uses high fiber raisins and bananas for sweetness.  The combination of healthy fats from the nuts and coconut oil also help keep blood sugar spikes from those fruits at bay! If you don’t want to go to the trouble of setting, rolling, and cutting out the fancy shapes, you can also make the cookie dough into a crumble, and simple sprinkle it over scoops of the ice cream! Sweet-Heart Ice Cream Cookie Sandwiches (Raw) Cookie 1/2 cup almonds 1/2 cup cup dried shredded coconut 4 tbsp raw cacao powder 1/4 c raisins pinch sea salt Ice Cream Layer 1 large banana 1/2 cup raspberries 4 tbsp coconut oil Cookie Directions Place nuts and coconut into a food processor and process until crumbly. Add in remaining ingredients. Process until a sticky dough forms. Roll out cookie batter onto a cutting board into desired thickness, and then cut into desired shapes.  Set cookies aside. Organic vs Non Organic

Food Transparency Farm-to-table. These days, if you’re a gourmet restaurant and you’re not doing farm-to-table, it’s hard to compete. While it has become mainstream to honor real food, we here at Hacienda del Sol have always looked to use the best, ripe, local and fresh ingredients when creating our decadent and delicious dishes in our restaurant.  We know that the closer to the field (or tree) we can source, the better the taste and nutrition it will deliver to our clients.  We also know that customer demand for sustainably sourced food has never been stronger and we want to offer our readers as much information on the topic that we can, while encouraging everyone to look further into where their food comes from whether at home, or while traveling. Organic  Let’s talk organic.  In North America there is no shortage of organic fruits and vegetables available at any supermarket. More and more  grocery stores are now stocking a wide variety of  organic foods, and this in itself shows a great shift in consumer supply and demand.  The same is starting to happen here in Central America, and it is thanks to buyer’s voting with their dollars!  The more we buy, the more […]

Culinary Options for All: Tips to Find Your Perfect Balance in Daily Nutrition

To cook, or not to cook.  That was our question.  And we decided to do both. Hacienda del Sol prides itself in being an all-welcoming wellness environment, and as such, we are continually revising and re-vamping our programs and offerings to best serve our new and returning guests.  Our food is one major draw for not only those in search of a healthy alternative to traditional buffet style all-inclusive resorts, but also a big reason that many of our clients dream of our recipes and returning to our oasis long after leaving. Long known as a vegetarian foodie’s haven, Hacienda has been ahead of the curve as far as raw cuisine goes, having had countless raw chefs grace our kitchen over the years, creating and curating many magnificent dishes.  In 2013, we made the shift from offering our meals in a family style manner, and premiered our a la carte menu, allowing guests to choose their own custom cuisine (see our blog post about that here).  At this point, the options for breakfast lunch and dinner were primarily raw, and most vegan, with the exception of a handful of non-raw flavour enhancing ingredients we chose to use (think low sodium […]

RECIPE: Sugar Free, Lemon Mojito Pie!

Here at Hacienda del Sol, we have visitors from all walks of life and often our guests come to us with very specific dietary needs.  Our menu is vegetarian, primarily raw and vegan, and is free of  dairy, wheat, and as mentioned, meat.  However, we know that there are hundreds of other meal protocols out there, and we do our very best to accommodate; whether it is simply a person’s choice to follow a Paleo diet, or a more serious situation like diabetes. Each month I am tasked with the assignment of creating a recipe post for this here blog, and this month I decided to come up with a shiny new new dessert recipe that is raw & vegan (no big deal) but also free of sugar.  More and more people are realizing that a diet high in processed and refined sweeteners can cause some real damage, wrecking havoc on the body often resulting in weight gain and insulin resistance, or sometimes diabetes, heart disease or worse!  Too much sugar in the diet, no matter the source, can also be a key indicator for things like candida, dampness, hormone imbalances, and more! This sweet-tart mojito pie, is a riff on a “traditional” raw cheesecake, […]

RECIPE: After Sport Smoothie

Keeping properly hydrated and fueled is key for optimal health and energy output for everybody, and every body. Here at Hacienda, we have developed a menu of juices and smoothies made to target specific nutritional needs, while also ensuring top marks on the tasty scale!  One of the most functional and foodie favored concoctions we serve is our After Sport Smoothie, designed to speed recovery by replenishing energy & nutrients. Key ingredients Raw Cacao: Locally sourced from a nearby plantation, this is the real deal: fresh, rich, and unadulterated.  Ram-packed full of antioxidant goodness, cacao is native to the Americas, and comes from the fruit of the Theobroma cacao tree. A cocoa fruit, or pod, has a rough and leathery rind, and is filled with whitish sweet pulp and many seeds. The seeds, or beans, are what eventually become our addiction: chocolate.  The bean from which we make this favorite confectionery is highly nutritious; packed full of potassium, selenium, magnesium and B vitamins. Cacao is a top source of antioxidants that may help lower risk of heart attack and certain cancers, and also might reduce inflammation! Note: cacao is often confused with cocoa. But they are vastly different. You see, cocoa is […]
