Mint Millet Chickpea

Creamy like mashes potatoes or fluffy like rice, millet is a delicious grain that can accompany many types of food. As with most grains, millet is available in markets throughout the year. It is an alkaline grain as well as it is high in potassium, magnesium, and protein. 1  10 ounce box of millet, cooked to manufacture directions 1  15.5 oz can of chickpeas, drained and rinsed 2 teaspoons grated orange zest 2 tablespoons extra virgin olive oil 1 teaspoon sea salt Freshly ground black pepper to taste 2 pounds cherry tomatoes cut into wedges 1/2 small sweet onion, thinly sliced 1/4 cup fresh mint, torn 1/4 cup roughly chopped Almonds In a medium bowl, mix together the orange zest, olive oil, sea salt, black pepper, tomatoes, onion, and mint. In a large bowl, put in millet, spoon in the chickpeas and tomato mint mixture, and fold together. Garnish with the chopped almonds and serve.

Coconut, caramel cookies

INGREDIENTS 3 cups dried shredded coconut 1 cup dates, pitted 3 tablespoons almond butter 2 tablespoons agave nectar 2 tablespoons vanilla 1 tablespoon cinnamon 2 teaspoons nutmeg A pinch of finely ground sea salt INSTRUCTIONS In a food processor place the dates, honey, vanilla, cinnamon, nutmeg, coconut butter, almond butter and sea salt and mix throughly. In a late mixing bowl, add the content of the food processor to the dried coconut and mix together. Roll into balls and place on a dehydrator of sheet. Press into uniform cookies with the bottom of a glass. Dehydrate for 12- 20 hours.

It’s almost Valentine’s day!  The perfect time to treat your whole body (and your love’s) with a whole food treat!  The following decadently delicious raw dessert recipe contains no added sugar, as it uses high fiber raisins and bananas for sweetness.  The combination of healthy fats from the nuts and coconut oil also help keep blood sugar spikes from those fruits at bay! If you don’t want to go to the trouble of setting, rolling, and cutting out the fancy shapes, you can also make the cookie dough into a crumble, and simple sprinkle it over scoops of the ice cream!
