Sweet-Heart Ice Cream Cookie Sandwiches (Raw)

It’s almost Valentine’s day!  The perfect time to treat your whole body (and your love’s) with a whole food treat!  The following decadently delicious raw dessert recipe contains no added sugar, as it uses high fiber raisins and bananas for sweetness.  The combination of healthy fats from the nuts and coconut oil also help keep blood sugar spikes from those fruits at bay! If you don’t want to go to the trouble of setting, rolling, and cutting out the fancy shapes, you can also make the cookie dough into a crumble, and simple sprinkle it over scoops of the ice cream! Sweet-Heart Ice Cream Cookie Sandwiches (Raw) Cookie 1/2 cup almonds 1/2 cup cup dried shredded coconut 4 tbsp raw cacao powder 1/4 c raisins pinch sea salt Ice Cream Layer 1 large banana 1/2 cup raspberries 4 tbsp coconut oil Cookie Directions Place nuts and coconut into a food processor and process until crumbly. Add in remaining ingredients. Process until a sticky dough forms. Roll out cookie batter onto a cutting board into desired thickness, and then cut into desired shapes.  Set cookies aside. Meet the Expert: Angie

Originally from Western Canada, Angie has been a member of the Hacienda de Sol family for many years.  She currently shares her expertise and experience as yoga teacher, practitioner, and wellness facilitator. After attending her very first yoga class at Hacienda del Sol back in 2003, and this launched her love of the practice and led her to her first 200 hour yoga teacher training here as well.  While living in Vancouver Canada in 2008, Angie attended a Kundalini Yoga class with Gloria Latham and she found her true path.   She completed a second 200 hour Yoga Teacher Training at Semperviva Yoga in Vancouver and started teaching a few months later.  Kundalini has been, and continues to be a magical journey for Angie, with no “end goal”; it is all about the journey – just like in life. Angie has travelled the world extensively, and training under incredible yoga teachers such as Gloria Latham, Gurmukh, Seane Corn, Max Strom, Anodea Judith,  and Mark Whitwell.  She is passionate about living a life that is balanced, authentic, healthy, harmonious and full of LOVE, laughter and JOY! Meet the Expert: Menlha

Menlha Bruneau – founder, Hacienda del Sol I have been involved in health and healing for many years.  It has been a prime interest to me to be well and to help others also be well, holistically.  I am the founder of Hacienda del Sol and of the Kootenay school of Rebalancing bodywork. This school certified over 350 students to practice rebalancing body therapy. I am a rebalancing bodywork master and have been practicing craniosacral (biodynamic) treatment for several years. For over 10 years at Hacienda del Sol we have been hosting juice cleanses, and I have been the facilitator for many of them.  I have done a number of cleanses myself over the years and keep up my own cleanliness with 2 personal cleanses a year at Hacienda del Sol. These cleanses are highly successful here thanks to the relaxed environment offered by immersion in nature, strong facilitation, constant support, detox-specific juices, and colema therapy.
